Skillet Pizza

Ingredients :

  • Mozzarella Cheese
  • Toppings of Choice
  • 10 inch non-stick skillet

Instructions :
1. Set skillet over medium high heat. Add a layer of Mozzarella cheese to the bottom of the pan. When the cheese starts bubbling, add toppings (don't overload it or you'll have a tough time later). Here I just added pepperoni.
2. Start watching the edges of the cheese. Once the edges start to brown, you can use a spatula to lift the them, as seen below.
3. Once the edges are browned all the way around, you can carefully slide the spatula under the pizza and slide it off onto a plate.
4. Let the pizza cool just a bit so the cheese will firm up. Then you can use a pizza cutter to slice it up. Now you can pick it up with your hands and eat it just like a regular pizza. It gives you all the taste, but leaves out all the carbs!

Pizza Bread


Ingredients:
2 teaspoons yeast
1 ½ cups warm water
3 1/3 cups all-purpose flour
2 teaspoons kosher salt
1 ½ tablespoons sugar
2 ½ cups favorite toppings, diced (I used pepperoni, sun-dried tomatoes, green onions, black olives, red pepper, green pepper, and roasted garlic.)
½ cup Parmesan
2 cups shredded mozzarella
1 tablespoon olive oil
1 jar of marinara sauce for dipping

Cheese Tortellini Pepperoni Pizza Casserole

Ingredients
  • 16 ounces Cheese Stuffed Tortellini - cooked according to package instructions
  • 2 Garlic Cloves - chopped
  • 1 Tablespoon Olive Oil
  • 2 Cups Whole Milk
  • 1/2 teaspoon Dry Italian Seasoning
  • 8 ounces Original Velveeta Cheese - cubed
  • 2 Cups Shredded Cheese Blend (a blend that includes mozzarella, like an Italian blend)
  • 2 ounces Pepperoni - quartered
  • 1/2 Cup Pizza Sauce
  • Sliced Pepperoni - for topping
  • 1 Cup Shredded Mozzarella Cheese
Instructions
  • Preheat oven to 375°F
  • Prepare and measure all ingredients before beginning.
  • In 3 quart pot over medium heat; cook garlic in oil while stirring for 1 minute or until golden.
  • Add milk and Italian seasoning. Stir and heat until milk begins to steam.
  • Reduce heat then add Velveeta and shredded cheese blend. Stir until melted.
  • Turn off heat but keep pot on burner. Add cooked tortellini and quartered pepperoni. Stir 1 minute then transfer mixture to casserole dish.
  • Dollop pizza sauce on top and swirl into cheesy tortellini without fully mixing.
  • Layer slices of pepperoni on top then sprinkle with mozzarella cheese.
  • Bake uncovered on center rack for 25 minutes. Broil on high for 3-4 minutes to brown.

Jalapeno Popper Pinwheels


These Jalapeno Popper Pinwheels are a spicy appetizer that can be served hot or cold (I prefer them hot)! Cream cheese, cheddar, bacon, and jalapeno all rolled up in a little pinwheel. These are always a crowd pleaser.

I know it’s not football season but these Jalapeno Popper Pinwheels have me feeling like I’m smelling fresh cut grass, waiting for the big game to start. What can I say, I’m a weirdo. As if six months of straight football games weren’t enough to fill my canteen, here I am mid-June pining for football. I do love myself all things jalapeno popper.

Remember these Jalapeno Popper Pigs in a Blanket, Jalapeno Popper Chicken Sliders, or these Buffalo Chicken Jalapeno Poppers? These Jalapeno Popper Pinwheels rank high up there with those. In fact, since my littles are afraid of all things spicy, I saved these for my husband who can truly appreciate them. He’s in his last week of finals for his Master’s Degree. I’ve hardly seen him this past week but it’s been about 5 minutes of catching up, him asking if any of these Jalapeno Popper Pinwheels are left, and then he goes back to studying. True story. I know he’s the one getting the degree but I kind of feel like I earned an honorable mention or something.

How To Taco Pizza Rolls

Ingredients
½ lb ground beef
1 can Pillsbury refrigerated classic pizza crust
2 tablespoons Old El Paso™ taco seasoning mix (from 1-oz package)
3 tablespoons water
1 cup shredded Mexican blend cheese
Optional toppings: lettuce, tomato, sour cream, onion, and guacamole

Fruit Pizza

Ingredients

1 (16.5 oz) pkg refrigerated sugar cookie dough
1 (8 oz) pkg PHILADELPHIA Cream Cheese, softened
1/4 cup granulated sugar
1/2 tsp vanilla extract
4 cups assorted fresh fruit (such as kiwi and strawberry slices, red raspberries, blueberries, diced pineapple and canned mandarine oranges)
1/4 cup apricot preserves, pressed through a sieve to remove lumps
1 Tbsp water

Ingredients
FOR THE GARLIC CREAM SAUCE:
1-½ Tablespoon Unsalted Butter
½ Tablespoons Olive Oil
3 cloves Garlic, Minced (or Use A Microplane If You Have It)
½ cups Heavy Cream
¼ cups 2% Milk
1 pinch Salt
1 pinch Cracked Black Pepper
1 pinch Red Pepper Flakes
¼ cups Parmesan Cheese, Grated
FOR THE NACHOS:
Your Favorite Crispy Tortilla Chips
½ cups Garlic Cream Sauce (Recipe Included)
¼ cups Onion, Diced
½ cups Pepperoni, Cut Into Bite Size Pieces
½ cups Black Olives Sliced
½ whole Green Bell Pepper, Seeds Removed, Diced
1 cup Colby-Jack Cheese, Shredded
