#Food Casa Ole Green #Sauce

If you have never had the creamy salsa verde that is found in many Mexican restaurants, it is a creamy avocado salsa (salsa de aguacate) with a hint of spice. I personally have had so many bowls of this sauce that the numbers reach well above the population of where I went to high school! This is a sauce that is easy to whip up in your food processor. It’s made from ingredients that include avocados, Rotel tomatoes, sour cream, cream cheese, garlic powder, and lemon juice. It’s delicious and addictive, and I guarantee you will make it again and again.

INGREDIENTS
4 avocados
16 ounces sour cream
1 can Rotel tomatoes
1 tablespoon garlic powder
4 ounces green chilies
1 tablespoon pickled jalapeno peppers
2 teaspoons salt
1 teaspoon lemon juice
3 ounces cream cheese
2 tablespoons chopped cilantro

INSTRUCTIONS
In a food processor combine cream cheese, avocados, lemon juice, garlic powder, jalapenos, cilantro salt, and sour cream, process until smooth. Add in the Rotel tomatoes, and green chilies in, and pulse several times to finish the sauce. Serve with chips.

GRILLED WHOLE FISH

Whole grilled fish is one of the most delightful meals, especially on a hot summer day when you don’t want to do any cooking in the house, besides throwing together a quick salad to accompany the meal.  Grilling fish whole enhances its flavor and juiciness because the skin and a thin layer of fat beneath it are left intact; these serve to insulate the flesh during cooking.  Any whole fish will do, but you generally want it small, about 10 inches or so.  Our favorite is the mild, white-fleshed Mediterranean sea bass also called branzino or branzini.  It has relatively few bones which are simple to remove.  Make sure your fish is scaled and gutted prior to cooking.  I used fresh dill and parsley for seasoning; you may also try cilantro and basil.  Recipe adopted from Martha Stewart Living.


2 whole fish, cleaned, heads and tails intact
Extra virgin olive oil
Sea salt and pepper
1 lemon, thinly sliced
3 sprigs fresh dill
1 lime, thinly sliced
3 sprigs fresh parsley 
Preheat grill to medium-high.  Drizzle cavity of each fish with olive oil, season with sea salt and freshly ground pepper.  Stuff one fish with lemon slices and dill, the other with lime slices and parsley.  Make long ¼ inch-deep diagonal slits on both sides of the fish to insure even cooking and to allow the seasonings to penetrate the fish.  Rub both sides with additional olive oil and season with sea salt and pepper.  Brush hot grill with oil and place fish directly on the grill or you may also use a grilling basket, like we did.  Cook uncovered about 5 to 7 minutes.  Flip fish over and grill on the other side for another 5 to 7 minutes or until cooked through and opaque.  Serve fish with lemon and lime wedges, and a favorite salad for a light and oh-so-satisfying meal!

mediterranean baked cod recipe with lemon and garlic

 This easy Greek-style baked cod recipe has quickly become a regular on my dinner rotation! A handful of Mediterranean spices plus a mixture of lemon juice, olive oil, and garlic, give it glorious flavor. See video & suggestions for what to serve along!
 It feels like I’m always recommending this Lebanese rice with vermicelli, but it makes the perfect bed for this lemony baked cod. Keep the Greek theme going by adding a side of traditional Greek salad. Or, for a heartier salad option, try this Mediterranean chickpea salad with eggplant.
INGREDIENTS
1.5 lb Cod fillet pieces (4-6 pieces)
5 garlic cloves, peeled and minced
1/4 cup chopped fresh parsley leaves
Lemon Juice Mixture 

5 tbsp fresh lemon juice
5 tbsp Private Reserve extra virgin olive oil
2 tbsp melted butter
For Coating

1/3 cup all-purpose flour
1 tsp ground coriander 
3/4 tsp sweet Spanish paprika
3/4 tsp ground cumin
3/4 tsp salt
1/2 tsp black pepper
INSTRUCTIONS
Preheat oven to 400 degrees F.
Mix lemon juice, olive oil, and melted butter in a shallow bowl. Set aside
In another shallow bowl, mix all-purpose flour, spices, salt and pepper. Set next to the lemon juice mixture.
Pat fish fillet dry. Dip fish in the lemon juice mixture then dip in the flour mixture. Shake off excess flour.
Heat 2 tbsp olive oil in a cast iron skillet over medium-high heat (watch the oil to be sure it is sizzling but not smoking). Add fish and sear on each side to give it some color, but do not fully cook (about a couple minutes on each side) Remove from heat.
To the remaining lemon juice mixture, add the minced garlic and mix. Drizzle all over the fish fillets.
Bake in the heated oven for until it begins to flake easily with a fork (10 minutes should do it, but begin checking earlier). Remove from heat and sprinkle chopped parsley.
Serving suggestions: Serve immediately with Lebanese rice and this Mediterranean chickpea salad or this traditional Greek salad.

Greek Fish with Tomato Sauce

 My brother cooked this yesterday while I put together the soup and other dishes – he likes fish and simple recipes that he can put together in just a few steps. This definitely fit his style cooking, so I hope he plans to add it to his regular repertoire. I’d definitely make it again too.

I liked that it was colorful and used things we had in our pantry – since we had fish on hand and the vegetables in the pantry, the only thing I needed to pick up at the store was a bit of parsley and a lemon.

We didn’t use Greek fish – in Chicago it can be hard to find tasty fresh fish, so we used Bassa fish fillets we had in the freezer. The only problem we ran into was giving the fish enough time to thaw, so baking it took longer than anticipated. To determine if fish is finished cooking, you want to see it flaking apart when you test it with a fork.
Psari Plaki Baked Greek Fish with Tomato Sauce
Servings: 4
Time: 1 hour

1/4 cup olive oil
2 onions
1 stalks celery
1 small carrots
1 clove garlic, chopped
1 can chopped tomatoes
1 tablespoon tomato paste
1/2 tsp. dried oregano
1/2 tsp. sugar
1/2 cup dry bread crumbs
1 lb fish steaks
2-3 Tbsp. chopped fresh parsley
1 Tbsp. fresh lemon juice
Preheat oven to 350 degrees. To save time, put vegetables in a food processor in batches from hardest to juiciest (carrots, celery, onions) and process into a fine chop. Heat 2-3 Tbsp. olive oil in a heavy frying pan. Add onion, celery, and carrot and cook over low heat for 10 minutes, or until soft.

Add the garlic, cook for 2 minutes, then add the chopped tomato, tomato paste, oregano and sugar. Simmer for about 10 minutes, stirring occasionally, until reduced and thickened. Season, to taste, with salt and pepper.

Arrange the fish in a single layer in a baking dish. Stir in the chopped parsley and the lemon juice into the sauce. Season, to taste, and pour over the fish. Scatter the breadcrumbs over the top and drizzle with oil. Bake for 20 minutes, or until the fish is just cooked.

Note: the photos show a doubled quantity, since we had extra guests at the table.

Lemon Meringue Pie Cannoli

Steps
1. Preheat oven to 425°F. Spray 8 cannoli forms with non-stick baking spray.
2. Unroll pie dough and cut four 4 1/2 inch circles from each crust. Make an egg wash by whisking the egg and water together. Wrap one pie dough circle around each cannoli form sealing the edges with egg wash. Set on a parchment paper lined baking sheet and freeze for 10 minutes.
3. Remove and bake for 10-12 minutes until lightly golden brown. Allow to cool for 10 minutes then carefully remove them from the cannoli forms. Let them cool completely.
 4. Stir together lemon curd and marshmallow fluff. Stir in the whipped topping. Pour into a disposable pastry or zip top bag.
5. Just before serving, snip the tip off the pastry bag and pipe the pie filling into the pie crust cannoli shells.
6. If desired, sprinkle lemon zest onto pie filling at ends of cannoli.
Ingredients :
1box (14.1 oz) Pillsbury™ Refrigerated Pie Crust, thawed
1egg
1teaspoon water
3/4cup lemon curd
1/2cup marshmallow fluff
1cup frozen whipped topping, thawed
Optional, 1 teaspoon lemon zest

CREAMY LEMON SQUARES

 FOR THE CRUST:
4 tablespoons butter, melted and cooled, plus more for pan
1-1/2 cup graham cracker crumbs
1/4 cup sugar
FOR THE FILLING
2 large egg yolks
1 can (14 ounces) sweetened condensed milk
1/2 cup fresh lemon juice (3 lemons)
How to make it :
Preheat oven to 350F / 180C degrees.
Brush a square baking dish with melted butter.
Crush graham crackers
Then add in sugar and butter and blend to mix.
Press mixture into bottom of prepared pan.
Bake until lightly browned, 8 to 12 minutes.
Cool crust, 30 minutes.

TO MAKE THE FILLING:
*In a large bowl, whisk together egg yolks and condensed milk.
*Add lemon juice; whisk until smooth.
*Pour filling into cooled crust; carefully spread to edges.
*Bake until set, about 15 minutes.
*Cool in pan on rack.
*Chill at least 1 hour before serving.
Serve with whipped cream.

Air Fryer Steak Kebabs

 Grab your skewers and start placing your kebabs on. I use metal skewers that came with this air fryer kit. They are reusable and fit right inside my Air Fryer. You could use wooden skewers but you would want to soak them first so that they don’t burn. Here’s a

Once the meat and vegetables are placed on your skewers, place them in your preheated Air Fryer of 390 degrees Fahrenheit. I usually can fit about 6 kebabs on my Air Fryer. I cook my kebabs for 12 minutes, flipping them halfway through.
 I suggest using top sirloin for these steak kebabs. It’s a cheaper cut but stays juicy after marinating and air frying.

For the vegetables, I’ve included my favorites in this recipe but you could definetly sub for your favorites. I’m thinking zucchini, pearl onions, and colored bell peppers would be great.

Ingredients
1 lb sirloin steak cut into 1 inch chunks
¼ cup olive oil
¼ cup soy sauce
1 Tbsp garlic minced
1 tsp brown sugar
½ tsp ground cumin
¼ tsp black pepper
8 oz Baby Bella mushrooms stems removed
1 red onion chopped into 1 inch pieces
1 Green Bell Pepper chopped into 1 inch pieces
salt and pepper to taste

Instructions
Combine steak, olive oil, soy sauce, garlic, cumin, salt and black pepper. Allow to marinate for 30 minutes.
Place marinated meat, baby bella mushrooms, green pepper, and red onion on skewers.
Preheat air fryer to 390 degrees Fahrenheit. Once preheated, place skewers inside of Air fryer. Cook for 10-12 minutes, flipping halfway.
Remove and Enjoy:)
